The thought of attempting a soufflé has intimidated many a home cook! I know it has me and even on this Easter Sunday when we added this recipe to our menu, I was nervous about putting it in the oven at the right time so that we could head to the table immediately when they came out of the oven!
However, although this recipe has a few steps, it’s not difficult and the result was beautiful and tasty. Allow enough time to cook the artichokes for 45 minutes to an hour, then remove the leaves and chokes. The rest comes together fairly quickly.
