Aren’t these winter recipes sounding divine? I’m LOVING Mimi’s introduction to this recipe in the cookbook. She readily espouses interpretation, which is a beautiful thing to be welcomed into as a home cook (and such a relief for those of us even marginally leery of sweetbreads, or at least trying them for the first time when they haven’t been cooked by a professional…more information on the specifics of sweetbreads here).
