Foie Gras is a controversial ingredient, people seem to love or hate it with not much middle ground. If you love Foie Gras, leave your tips and tricks here. I don’t love Foie Gras and find it easier to handle with a good glass of wine. The classic pairing is Sauternes, but Champagne or Sauvignon Blanc will work nicely too. You could even go red and try a Cabernet Sauvignon.
If you can’t find figs, you might consider persimmons or any fruit you associate with autumn.
