Rillettes, as I understand, are traditionally made using pork. However, as many recipes have done over the years, it has evolved to allow other meats and even fish. This week’s rillettes call for tuna belly and was a challenge for some because of that ingredient’s elusiveness! How did you do with this recipe? I’m so looking forward to reading your posts!
